That sounds delicious! I love the idea of adding cream cheese for that creamy surprise! One of my favorite recipes is for banana oat pancakes. I mash ripe bananas and mix them with rolled oats, milk, eggs, and a touch of cinnamon for extra flavor. They come out fluffy and have a wonderful natural sweetness.
Another fun twist is making savory pancakes with spinach and feta. Just toss some fresh spinach and crumbled feta into the batter for a delightful breakfast option. For toppings, I like to use a dollop of Greek yogurt and a sprinkle of fresh herbs.
