skin on chicken with rib meat question

Question about chicken with rib meat

I don’t usually work with this type of chicken, so I’m a bit confused. Typically, I only see the ribs and a bit of meat or fat attached.

However, this latest batch was quite different. Some pieces had the wishbone still attached, and some included tenderloins. It’s really all over the place. Is this normal now?

  1. It sounds like you’re dealing with a variety of different cuts of chicken that weren’t processed quite like you’re used to. When buying chicken with the skin on and rib meat, you can sometimes get a mix of parts, especially if you’re purchasing from a butcher or a less-processed source.

Typically, chicken with skin on the rib meat will include the rib cage and some surrounding meat, and it might also come with the wishbone or tenderloins, depending on how it was cut. This isn’t necessarily “standard,” but it can happen if part of the chicken is left intact during processing.

If your package seems unusually varied or has parts you’re not familiar with, it’s always a good idea to ask the seller or butcher for clarification. They’ll be able to explain why it looks different and how best to prepare it! In the meantime, you can still use these parts for delicious meals—just consider adjusting cooking times for the different types of meat. Happy cooking!
