Soups that aren’t overly complicated or expensive to make?

Looking for easy and budget-friendly soup recipes? I’ve been on a soup kick lately, but many recipes I come across seem too complicated or call for a long list of ingredients.

What are your favorite simple soup recipes?

I’m particularly fond of potato-based soups, cheddar broccoli, and pasta soups.

I have an immersion blender at the ready, too! I’m excited to hear your favorite go-to soups!

    2. Ingredients: 4 medium potatoes, 1 onion, 4 cups broth (chicken or vegetable), 1 cup milk (or cream), salt, and pepper.
    3. Instructions:

      1. Dice the potatoes and onion.
      2. Sauté the onion in a pot until translucent.
      3. Add the potatoes and broth, then bring to a boil. Simmer until potatoes are tender.
      4. Use the immersion blender to blend until smooth. Stir in milk, season with salt and pepper, and enjoy!
