    Vegan Stuffed Bell Peppers

    Ingredients:
    – 4 large bell peppers (any color)
    – 1 cup quinoa or brown rice
    – 1 can black beans, rinsed and drained
    – 1 cup corn (fresh, canned, or frozen)
    – 1 large tomato, diced
    – 1 small onion, diced
    – 2 cloves garlic, minced
    – 1 tsp cumin
    – 1 tsp chili powder
    – Salt and pepper to taste
    – Fresh cilantro or parsley for garnish
    – Optional: avocado slices or a squeeze of lime for serving

    Instructions:
    1. Preheat the oven to 375°F (190°C).
    2. Cook the quinoa or brown rice according to package instructions and set aside.
