Sick with Pneumonia and wanted to add some pizazz to Campbell’s chicken noodle

Feeling under the weather with pneumonia and looking to spice up my usual Campbell’s chicken noodle soup. Thanks to my amazing friends and family who’ve provided me with plenty of soup while I recover, I decided to give it a little twist today without too much hassle. Here’s what I did:

  1. Sautéed one chopped onion.
  2. Added a sprinkle of turmeric, ginger, garlic powder, and half a teaspoon of lemongrass paste.
  3. Stirred in one can of Campbell’s Chicken Noodle and one can of lite coconut milk.
  4. Tossed in two handfuls of spinach and a squeeze of lime juice.

And voila! A refreshing new take on soup. Sure, a homemade version might be healthier, but honestly, I’m just too tired right now.
