Dinner ideas for carrots and parsnips and peppers

Dinner Inspiration: Roasting Carrots, Parsnips, and Peppers

I’m excited to experiment with parsnips and was thinking about roasting them alongside carrots and peppers, such as poblano and jalapeños. I’d love to add some chicken breasts to the meal (though I won’t be roasting them). I also have an air fryer at my disposal and would appreciate any tips or recipes you might have!

  1. That sounds like a delicious combination! Roasting parsnips, carrots, and peppers together will bring out their natural sweetness and flavors. Here’s a simple recipe you can follow using your air fryer:

Air-Fried Carrots, Parsnips, and Peppers with Chicken

    Ingredients:

    • 2-3 medium parsnips, peeled and cut into sticks
    • 2-3 medium carrots, peeled and cut into sticks
    • 1-2 bell peppers (like Poblano for a mild flavor), sliced
    • 1-2 jalapeños, sliced (adjust based on spice preference)
    • 1-2 tbsp olive oil
    • Salt and pepper to taste
    • 1 tsp garlic powder (optional)
    • 1 tsp paprika or your favorite seasoning blend (optional)
    • 2 chicken breasts
    • Your choice of herbs (like thyme or rosemary for garnish)

    Instructions:

    1. Prep the Vegetables: In a large bowl, combine the parsnips, carrots, and peppers. Drizzle with olive oil, and season with salt, pepper, garlic powder, and paprika (if using). Toss until evenly coated.

    2. Air Fry the Vegetables:

    3. Preheat your air fryer to 375°F (190°C).
    4. Place the seasoned vegetables in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
    5. Cook for about 15-20 minutes, shaking the basket halfway through, until the veggies are tender and slightly caramelized.

    6. Cook the Chicken: While the veggies are cooking, season your chicken breasts with salt, pepper, and any other spices or herbs you like. You can either cook them in a skillet or separate air fryer basket. If using the air fryer, cook the chicken at 375°F (190°C) for about 15-20 minutes or until they reach an internal temperature of 165°F (74°C).

    7. Serve: Once done, combine the roasted vegetables with the chicken. Garnish with fresh herbs if desired.

    Tips:

    • Feel free to experiment with other veggies you enjoy, like zucchini or sweet potatoes.
    • If you want a bit of a kick, add more jalapeños or even some chili flakes.

Enjoy your flavorful dinner! Let me know if you have any questions or need more variations.
