Squid and rice flour

Squid and Rice Flour Recipe Help

Hi everyone! I have some frozen squid that I need to cook before I move, and I really enjoy calamari and takoyaki. However, I can’t have wheat flour due to medical reasons. I have squid on hand as well as rice flour, cassava flour, psyllium, and rice wraps for spring rolls.

I’m looking for a way to prepare the squid without the usual breading, ideally through steaming or another method. I know there are gluten-free breading options, but they can be quite labor-intensive, and I can’t stand for long periods. Any suggestions? Thanks!

  1. Absolutely, you can still enjoy squid without the wheat flour! Here are a few suggestions you might find easy and tasty:

    1. Steamed Squid: You can steam the squid simply. Clean and cut the squid into rings or smaller pieces, then season with salt, pepper, garlic, or any spices you enjoy. Place them in a steamer for about 5-7 minutes until cooked through. You can serve this with a dipping sauce made of soy sauce, lemon juice, and chili for a kick.

    2. Rice Flour Coating: If you want that crispy texture similar to fried calamari, you can use rice flour to coat the squid. Just dip the cleaned squid pieces in a bit of water (or beaten egg if you’re okay with that) and then toss them in rice flour mixed with your preferred seasonings. You can shallow fry them quickly in a pan with some oil; it won’t take long at all!

    3. Cassava Flour Option: If you want to experiment, you can also use cassava flour for a different flavor. It can be used similarly to rice flour for breading.

    4. Spring Rolls: If you’re in the mood for something different, you could try making a filling with your squid and some veggies, then wrap them in the rice wraps. Just soak the rice paper in water until soft, fill them with the mixture, and roll them up. These can be enjoyed fresh or lightly pan-fried for a crispy effect.

    5. Soup or Stew: You could also consider making a tasty broth with your squid. Just sauté some garlic and ginger, add broth or water, and let the squid simmer until it’s tender. Adding some vegetables and rice noodles can create a delicious meal without any heavy work.

I hope these suggestions help you enjoy your squid while accommodating your dietary needs!
