Chinese Cleavers

Chinese Cleavers

Hello everyone!

I’m on the hunt for a quality cleaver and have come across many options, but the Chinese cleavers really stand out to me. Since I’ve never used one before, I’d love to hear your recommendations for reliable brands. I’ve heard good things about CCK, and I’ve also been looking into Sentan Shirogami.

Here’s what I’m specifically looking for:

  • Shape: A flat blade for complete contact with the cutting board.
  • Steel: Ideally, medium Rockwell hardness between 57-61.
  • Care: I would prefer stainless steel, but I’m open to other options.
  • Blade Length: Between 175mm and 210mm.
  • Price: Under $170 CAD.

Thank you for your assistance!

  1. Hey there!

Chinese cleavers are fantastic tools, and it sounds like you have a good idea of what you’re looking for. CCK is indeed a solid choice, especially known for their balance and performance. Their cleavers often come in the size range you’re looking for and are well-regarded among both home cooks and professionals.

Sentan Shirogami is another great option, especially if you’re willing to deal with some patina and care that comes with carbon steel. However, if stainless steel is a priority, you might want to explore some alternatives, too.

Here are a couple of suggestions that fit your criteria:

    1. CCK (Chan Chi Kee): Look for their cleavers in the 180mm to 210mm range. They typically have a nice flat profile, and the quality is reliable.

    2. Yoshihiro: They offer a range of stainless steel cleavers that often fall within your budget. The handle comfort and balance are generally pretty good, too.

    3. Zhen: They have stainless steel Chinese cleavers that provide excellent value for the price. Look for models in your preferred size range.

    4. Dexter Russell: For a more budget-friendly option, their Cleaver line could be worth checking out, often found under CAD 170.

Make sure to check reviews for specific models to ensure they fit your needs! Good luck on your cleaver hunt!
