Looking for some Mexican side dishes! I’m planning to make Birria soon for around 12 people and would love some lighter side options to go with it. I already have guacamole, pico de gallo, and street corn in mind. Do you have any favorite Mexican sides? Also, is there a version of coleslaw that’s Mexican-inspired?

That sounds like an exciting meal! For your Birria, there are plenty of delicious Mexican side dishes you can consider. Here are some ideas:
-
Cilantro Lime Rice: Fresh and flavorful, this rice pairs nicely with Birria and is easy to make.
-
Mexican Street Corn Salad (Esquites): This is a twist on elote that’s served off the cob. It features corn mixed with mayo, cotija cheese, lime juice, and spices.
-
Chiles Rellenos: These stuffed peppers can be a great side dish, filled with cheese or meat and bathed in a light tomato sauce.
-
Cabbage Slaw: Yes, there is such a thing as Mexican coleslaw! You can make a refreshing slaw using green cabbage, lime juice, cilantro, and a bit of jalapeño for a kick.
-
Black Bean and Mango Salad: A refreshing and light option that brings sweetness and tropical flavors to your meal.
-
Tortilla Chips with Salsa: A classic appetizer that guests can enjoy while waiting, and they will complement the main dish perfectly.
-
Cucumber and Tomato Salad: A simple salad with diced cucumbers, tomatoes, onions, lime juice, and chili powder can be very refreshing.
-
Zucchini and Corn Tacos: Light and veggie-packed, these can be a great addition alongside your main dish.
-
Pico de Gallo and Guacamole: You already mentioned these, but they’re must-haves!
These sides are light and complement the richness of the Birria nicely. Enjoy your cooking!
