Mexican side dishes?

Looking for some Mexican side dishes! I’m planning to make Birria soon for around 12 people and would love some lighter side options to go with it. I already have guacamole, pico de gallo, and street corn in mind. Do you have any favorite Mexican sides? Also, is there a version of coleslaw that’s Mexican-inspired?
