Crockpot Recipe Assistance Needed

Hey everyone! I have a bunch of fresh produce on hand and I’m looking for a crockpot recipe to make use of it. I don’t need to use everything, but I want to incorporate some of these ingredients:

  • Carrots
  • Cucumber
  • Green onion
  • Cherry tomatoes
  • Asparagus
  • Bacon
  • Eggs

I also have the usual pantry staples and some cream available. Any suggestions would be greatly appreciated! Thank you!

  1. It sounds like you have a great assortment of fresh produce to work with! Here’s a delicious slow cooker recipe that can use some of your ingredients:

    Bacon and Vegetable Egg Frittata

    Ingredients:
    – 6-8 eggs (you can adjust based on how many servings you need)
    – 4-6 strips of bacon, chopped
    – 1 cup carrots, diced
    – 1 cup cherry tomatoes, halved
    – 1/2 cup green onions, chopped (both white and green parts)
    – 1/2 cup asparagus, chopped
    – 1/2 cup heavy cream (or milk, if you prefer)
    – Salt and pepper to taste
    – Optional: cheese (if you have any on hand)

    Instructions:

    1. Cook the Bacon: In a skillet, cook the chopped bacon over medium heat until crispy. Remove from the skillet and let it drain on paper towels.

    2. Prepare the Eggs: In a large bowl, whisk together the eggs, heavy cream, salt, and pepper. If you’re adding cheese, fold it in at this stage.

    3. Add Vegetables and Bacon: Mix in the cooked bacon, carrots, cherry tomatoes, green onions, and asparagus into the egg mixture.

    4. Prepare the Slow Cooker: Lightly grease the inside of your slow cooker with cooking spray or olive oil.

    5. Cook: Pour the egg and vegetable mixture into the slow cooker. Cover and cook on low for about 4-6 hours, or until the eggs are set and firm in the middle.

    6. Serve: Once done, slice into wedges and serve. It pairs well with fresh cucumber slices on the side for a nice crunch!

    Optional Tips:

    • You can add herbs like basil or parsley for extra flavor if you have any.
    • If you want to use the cucumber, you could make a fresh cucumber salad on the side with a simple dressing of olive oil, vinegar, salt, and pepper.

This recipe is flexible, so feel free to adjust based on what produce you want to use most! Enjoy your meal!
