Is it possible to over-process hummus?

Last week, I made a batch of hummus using the recipe linked below, and it turned out perfectly. However, when I doubled the recipe yesterday, the result was quite different—much denser and almost gluey in texture.

I followed the recipe exactly, so I’m wondering if I might have over-processed it during blending? Is that a possibility? Or do you have any other suggestions for why this batch didn’t turn out the same way?
