Looking for alternatives to aluminum-free baking powder for crisping chicken skin?

Unfortunately, my local grocery store doesn’t stock it. I tried a mixture of cream of tartar, baking powder, and cornstarch as a substitute, but it resulted in a rather bitter flavor. Any other suggestions? I’d love to hear your ideas!
