Best experiences in Chicago?

Looking for the best experiences in Chicago! I’m planning a trip in mid-May to celebrate my birthday. Alinea has always been on my bucket list, but unfortunately, there are no gallery experiences available during my stay. I worry that the Salon will leave me wanting more, and I’d prefer to hold out for the Gallery or Kitchen Table.

With that in mind, what recommendations do you have? Cost isn’t an issue. We love pescatarian-focused dishes but are also fans of Wagyu. We’re not big on red meat or small game-heavy menus (a course or two is okay, though). Thanks!
