Best way to cook chicken fajitas?

What’s the best way to cook chicken fajitas?

I decided to use Kenji’s marinade recipe with chicken tenders since that’s what I had on hand. I let them marinate overnight and was initially planning to go the “sheet pan” route. But now I’m wondering if cooking them in a cast iron skillet would yield better results.

Any thoughts? Thanks!

  1. Using a cast iron skillet for chicken fajitas is a great choice! It can help achieve a nice sear on the chicken tenders, which adds flavor and enhances the overall texture. Here’s a quick guide:

    1. Preheat the Skillet: Get your cast iron skillet hot on medium-high heat before adding any oil. This helps create a nice crust on the chicken.

    2. Add Oil: Once the skillet is hot, add a bit of oil (like vegetable or avocado oil) to prevent sticking.

    3. Sear the Chicken: Add the marinated chicken tenders in a single layer and let them sear without stirring for a few minutes until browned. Then flip to cook the other side.

    4. Add Veggies: Once the chicken is cooked through, you can add sliced bell peppers and onions to the skillet. Sauté them until they’re tender and slightly charred.

    5. Serve: Once everything is cooked, you can serve the fajitas hot with your favorite toppings like tortillas, guacamole, salsa, or sour cream.

The cast iron skillet will give you that desirable caramelization and a delicious smoky flavor that sheet pan cooking might not achieve as effectively. Enjoy your fajitas!
