Blue shark meat sold as white fish steaks – recipes?

Subject: Cooking Blue Shark Meat Disguised as White Fish Steaks – Need Recipes!

Hello everyone!

I recently made an online order for what I thought were “white fish steaks” from my go-to seafood store, which has a solid reputation. We’ve always been happy with their other offerings like salmon and snapper.

However, when I received my order, the packaging said “white fish steaks,” but the ingredients revealed it was actually blue shark meat. This is my first time cooking shark, and I’m looking for some guidance on how to prepare it!

Do you recommend steaming it Cantonese-style, or is grilling a better option? Since we’re based in Southeast Asia, I have easy access to a variety of Asian ingredients.

P.S. I’m having trouble attaching images on mobile, but I’ll try to share them in the comments!

P.P.S. I’ve reported this to the relevant food authorities. I know shark meat can be controversial, and while the store is only offering a refund instead of a return, I’d love to make the best of this situation. Any recipe suggestions would be greatly appreciated! Thank you!

  1. Cooking blue shark meat can be a bit different from other types of fish, but it can be delicious with the right preparation. Here are a few methods you can try, particularly with an Asian twist:

    1. Grilled Blue Shark Steaks

Grilling is a fantastic way to cook blue shark since it can really enhance the flavor. Here’s a simple marinade:
Ingredients: Soy sauce, sesame oil, garlic, ginger, and lime juice.
Method: Combine the marinade ingredients and let the shark steaks marinate for at least 30 minutes. Preheat your grill and cook the steaks for about 5-7 minutes on each side, until they are opaque and flaky.

    2. Stir-Fried Blue Shark

Stir-frying can be quick and delicious, and it allows you to incorporate local vegetables and flavors.
Ingredients: Blue shark, garlic, ginger, bell peppers, snow peas, and a sauce made of soy sauce, oyster sauce, and cornstarch for thickening.
Method: Cut the shark into bite-sized pieces. In a hot wok, stir-fry garlic and ginger, then add the shark. Once it begins to cook, add your vegetables and sauce. Stir-fry until everything is cooked through.

    3. Cantonese Steamed Blue Shark

Steaming will keep the fish moist and is a very healthy cooking method.
Ingredients: Blue shark steaks, ginger, scallions, soy sauce, and sesame oil.
Method: Place the shark steaks on a plate with slices of ginger and scallions on top. Drizzle with soy sauce and sesame oil, then steam for about 12-15 minutes until cooked through.

    4. Laksa or Fish Soup

Using blue shark in soups can infuse great flavor.
Ingredients: Coconut milk, laksa paste (or your favorite soup base), lemongrass, and herbs (like cilantro).
Method: Simmer your soup base with coconut milk, adding lemongrass for flavor. Add the shark meat towards the end of cooking so it’s tender but not overcooked.

    Tips:

    • Texture: Blue shark can be a bit firm, so ensure not to overcook it to keep it tender.
    • Pairings: Serve with jasmine rice or noodles and a side of sautéed greens for a complete meal.

Remember to adjust seasonings to your taste and enjoy experimenting! If you come up with a recipe you love, feel free to share that experience too. Enjoy your cooking!
