Bought an extra 2 gallons of whole milk

Accidentally bought an extra 2 gallons of whole milk! With a newborn at home, my brain completely froze while I was grocery shopping yesterday, and now I’ve got 3 gallons of whole milk currently taking up space in my fridge.

Aside from a mountain of cereal and hot chocolate, are there any dishes I can whip up with this before it spoils?

UPDATE: Thanks for all the fantastic suggestions! I’ve decided to make Paneer. It’s currently hanging over the sink for a 30-minute stretch. I’m using a combination of recipes from Serious Eats and Swasthi.

UPDATE 2: It turned out really well! I’m having trouble posting a picture, but I’m excited to prepare Paneer Tikka Masala later!
