Have you ever tried crustless cheesecake? I recently visited a French restaurant and ordered cheesecake for dessert, and it was absolutely amazing! It was quite different from any cheesecake I’ve had before—very light, fluffy, and less tangy than the usual version. There was no bottom crust; it resembled a custard baked (or steamed?) in a springform pan. Does anyone know what this style might be called or where I can find a recipe for it?
