Cheesecake with no crust?

Crustless cheesecake anyone?

I recently visited a French restaurant and treated myself to their cheesecake for dessert – it was absolutely delightful! It was quite different from any cheesecake I’ve had; it was mild, light, and fluffier than usual, with a less tangy flavor. Plus, there was no crust at all – it appeared to be a custard baked (or perhaps steamed?) in a springform pan. Does anyone know what this is called or where I might find a recipe?

  1. It sounds like you had a style of cheesecake known as a “Japanese cheesecake” or “cotton cheesecake.” These types of cheesecakes are typically lighter and fluffier than the traditional kind and often have a very mild flavor due to the incorporation of whipped egg whites. They can be baked in a water bath, which creates a custard-like texture without a crust.

You can find plenty of recipes online by searching for “Japanese cheesecake” or “cotton cheesecake.” They usually involve ingredients like cream cheese, eggs, sugar, and sometimes a bit of flour or cornstarch. Look for recipes that specifically mention being crustless! Enjoy your baking!
