Tender steaks, please help!
I always buy prime steaks, and tonight we had a prime ribeye. I defrost it for at least 24 hours, then I prepare it with a little olive oil, salt, and pepper, letting it rest at room temperature for about 30 minutes before cooking. I cook it on the grill, monitoring the temperature with a reliable thermometer, aiming for medium rare and pulling it off the grill at around 125°F, knowing it will rise a few degrees. I let it rest for about 5 minutes before slicing into it, but it’s always chewy—even the filet mignon. What am I doing wrong?
