Chinese Cleavers
Hello everyone!
I’m on the hunt for a quality cleaver and have come across many options, but the Chinese cleavers really stand out to me. Since I’ve never used one before, I’d love to hear your recommendations for reliable brands. I’ve heard good things about CCK, and I’ve also been looking into Sentan Shirogami.
Here’s what I’m specifically looking for:
- Shape: A flat blade for complete contact with the cutting board.
- Steel: Ideally, medium Rockwell hardness between 57-61.
- Care: I would prefer stainless steel, but I’m open to other options.
- Blade Length: Between 175mm and 210mm.
- Price: Under $170 CAD.
