Chinese Cleavers Recommendation Request

Hi everyone!

I’m in the market for a quality cleaver and have been particularly drawn to Chinese cleavers. However, I’m not experienced with them and could use some guidance on reliable brands. I’ve heard good things about CCK and am also considering the Sentan Shirogami.

Here’s what I’m specifically looking for:

  • Shape: A flat blade for optimal contact with the cutting board.
  • Steel: A medium Rockwell hardness, around 57-61.
  • Care: Ideally stainless, but I can be flexible.
  • Blade Length: Between 175mm to 210mm.
  • Price: Ideally under $170 CAD.
