Cooking two bags of split peas

Cooking two bags of split peas, and I’m contemplating whether I should simply double the water from 6 cups to 12 cups.

Also, do you think everything—8 oz of salt pork, an onion, and a couple of celery stalks—will fit in my 5-quart Dutch oven?

By the way, this is my first experience with salt pork. I also bought a ham hock. Should I just stick with the hock like I usually do?
