Costco is pricey but it helped some of my executive dysfunction

Costco might be a bit pricey, but it has really helped me manage my executive dysfunction. I found that the semi-premade options there are actually pretty easy to navigate once I organized my shopping list by meals—breakfast, lunch, dinner, dessert, and snacks.

While they might be basic, I felt quite accomplished boiling some ravioli because the instructions were straightforward. I have meatballs that I can just microwave, and I can store the rest in the freezer. I can grab bread and peanut butter for an instant lunch—just spread and go! My only downside is that the produce prices are outrageous, so I usually shop for that elsewhere. Overall, though, it’s pretty simple! Plus, I managed to stick to a budget of $100 or less.

In short, I discovered that cooking doesn’t have to be hard when you start small and build up. Costco definitely makes the process easier!

P.S. I should mention that my tiny apartment doesn’t have a dishwasher or laundry, so I can’t really use reusable towels or wash dishes effectively.

    As for go-tos, I love one-pan meals for simplicity. You can throw in some protein, veggies, and seasonings, and just let it bake or sauté. It’s minimal cleanup, which is a plus! I also keep things like canned beans and charcuterie board supplies handy for quick snacks or meals without a lot of prep. And I totally understand the struggle with limited kitchen resources; keeping it simple really is the way to go!
