Ingredients:
– 1 lb (450g) lamb or beef, cut into cubes
– 1 large onion, finely chopped
– 2-3 cloves of garlic, minced
– 1 inch piece of ginger, minced
– 1 can (14 oz/400g) diced tomatoes
– 1 cup coconut milk or yogurt (optional)
– 2-3 tbsp curry powder or garam masala
– Salt to taste
– Olive oil or ghee
– Fresh cilantro for garnishing (optional)
Instructions:
Prep the Ingredients: In a microwave-safe bowl, add a little olive oil or ghee and the chopped onion. Microwave on high for about 3-4 minutes, stirring halfway, until the onion is soft.
Add Aromatics: Stir in the minced garlic and ginger, and microwave for another 1-2 minutes until fragrant.
