Hi everyone! I recently cut my duck breasts into three sections before salting them, and I wanted to share my plan for drying them. Instead of letting them sit in the refrigerator wrapped in cloth for weeks, I’m considering using a dehydrator for a quicker process. How long should I set the dehydrator for, and what temperature would be best? Any advice would be greatly appreciated! Thank you!
