It’s Fat Tuesday! Perfect time for a quick Cajun dish. While I may not be giving anything up for Lent (not even Catholic), I can’t resist the chance to whip up a delicious bowl.

- 1 box of Zatarain’s Red Beans and Rice
- 13.5 oz of Andouille sausage
- The Holy Trinity: 2 bell peppers (one red and one green for a pop of color and flavor), celery, and onion
- A generous amount of garlic (because who doesn’t love garlic?)
- Homemade chicken stock for the base
