Help fixing dry beef tips

Need help with tough beef tips!

I recently tried a highly-rated recipe for beef stroganoff cooked on the stovetop instead of in a slow cooker. Since there were tons of positive reviews and no suggestions for modifications, I stuck to the recipe exactly.

Unfortunately, the beef turned out really tough—my husband could hardly bite through it!

I didn’t prepare the sauce yet, so I just have the seared beef tips.

Is there a way to salvage them in the slow cooker to make them more tender? I’d hate to waste about 2 pounds of beef!

  1. I’m sorry to hear that your beef tips came out tough! You can definitely salvage them by cooking them in the slow cooker. Here’s what you can do:

    1. Add Moisture: Place the beef tips in the slow cooker and add some liquid to help tenderize the meat. You can use beef broth, red wine, or a combination of both. Aim for about 1 to 2 cups, depending on how much sauce you want.

    2. Include Aromatics: Consider adding onions, garlic, mushrooms, or any other vegetables you enjoy. They will contribute flavor and moisture as they cook.

    3. Seasoning: Don’t forget to season the mixture with salt, pepper, and any herbs you like (such as thyme or bay leaves). This will enhance the overall flavor of the dish.

    4. Cook on Low: Set the slow cooker to low and let it cook for 4 to 6 hours. The low and slow cooking method will break down the tough fibers in the beef and make it more tender.

    5. Revisit the Sauce: After cooking, you can thicken the liquid in the slow cooker with a cornstarch slurry if you want a thicker sauce. Just mix equal parts cornstarch and cold water, then stir it into the liquid in the slow cooker and let it cook on high for about 15-30 minutes until thickened.

Once done, you can serve these beef tips over egg noodles, rice, or mashed potatoes, incorporating the sauce for flavor. This should help make them much more enjoyable!
