Help Needed: Fixing Tough Beef Tips

I recently tried a new stovetop recipe for beef stroganoff, instead of using my slow cooker. The dish had rave reviews, with no suggested alterations, so I followed the instructions exactly.

Unfortunately, the beef turned out incredibly tough—my husband could hardly bite through it!

Since I skipped making the sauce, I just have the seared beef tips. Does anyone have tips on how I can use a slow cooker to tenderize them? I’d hate to waste around 2 lbs of meat!

  1. Absolutely, you can definitely salvage your beef tips in the slow cooker! Here’s what you can do:

    1. Add Liquid: Pour some beef broth or stock into the slow cooker. You can also use a combination of broth, wine, or even a bit of Worcestershire sauce to add flavor. Aim for enough liquid to cover the bottom but not completely submerge the beef.

    2. Include Aromatics: Toss in some onions, garlic, or mushrooms to enhance the flavor. These will also help create a more tender succulent texture.

    3. Cook Low and Slow: Set your slow cooker on low and let it cook for several hours (about 4-6 hours). The long cooking time will help tenderize the beef further.

    4. Check for Doneness: After a few hours, check the beef. It should be fork-tender. If it’s still tough, you can let it go longer.

    5. Make a Sauce: If you haven’t already, consider making a sauce with the liquid at the end. You can thicken it with a cornstarch slurry or some flour to make a delicious gravy to accompany your beef.

By giving the beef tips some extra TLC in the slow cooker, you should be able to achieve a much more tender result. Good luck!
