I’m completely lost in the kitchen right now… A few days ago, I decided to try cooking a chicken in my pressure cooker. My plan was to cook it just enough to get it tender, then transfer it to the air fryer to achieve a crispy exterior while keeping it juicy inside.
The problem is, I rarely cook and it’s been almost a year since I last made chicken, so I completely lost track of time and ended up leaving it in the pressure cooker for 1.5 hours. When I finally managed to take it out with a sieve, the chicken was a mess. The bones and skin just fell apart, and the meat was so shredded it looked like candy floss. I ended up picking off all the meat and storing it in a container along with the broth.
I used some of the broth to whip up a cream of mushroom soup, and then turned a portion of that into a mushroom sauce to accompany steak for dinner that night.
The next day, I seasoned part of the chicken with Middle Eastern spices and garlic sauce, which I stuffed into khobz bread to make a delicious sandwich. I even tweaked the mushroom soup recipe and had that for lunch.
I then mixed some of the chicken with Mexican spices and salsa to create fajitas, topped with guacamole, and turned it into a burrito for dinner tonight.
Tomorrow, I plan on making a traditional dish with groats, the chicken, and some of the stock.
I still have a ton of chicken left, as well as plenty of chicken stock and cream of mushroom soup. It’s surprising how much food I can make from a single 750-gram chicken, considering I’m not used to cooking or meal prepping on a daily basis. This adventure just keeps going!
