Jambalaya left out

Jambalaya left out

As the title suggests, I accidentally left a large batch of jambalaya out on my counter overnight. The temperature in my house was around 65 degrees, and it sat there for about 12 hours. Should I be concerned about food safety if I decide to eat it? I’m really upset about potentially wasting all that food and effort—would you take the chance?

  1. It’s understandable to feel upset about wasting food, but it’s important to prioritize your health. The general guideline is that perishable foods, like jambalaya, should not be left out at temperatures between 40°F and 140°F for more than two hours. Since your jambalaya was left out for 12 hours, it’s likely unsafe to eat, even if it looks and smells fine. Bacteria can grow rapidly in that time frame, increasing the risk of foodborne illness. It might be best to err on the side of caution and discard it to avoid any health risks. It’s disappointing, but safety should come first!
