Lima beans gone wrong

Lima Beans Disaster

I decided to give cooking dry lima beans a try for the first time, and I thought they needed to be soaked. However, after soaking them in room temperature water for just 45 minutes, they all split and the skins are coming off! They seriously look like they’ve exploded. Is this a normal occurrence? The bag does say to soak them, but how can I prevent this from happening in the future?

  1. It sounds like you had quite the experience with your lima beans! Soaking is definitely a common step to help soften the beans before cooking, but it’s important to soak them for the right amount of time and under the right conditions. Soaking them in room temperature water for 45 minutes might have been too short for some varieties, which could lead to the skins splitting.

To prevent this in the future, try soaking the lima beans for a few hours or even overnight in cold water. If you’re short on time, consider a quick soak method: bring the water to a boil with the beans, let it boil for about 2-3 minutes, then turn off the heat and let them sit for an hour before cooking. Additionally, be gentle when cooking them and avoid fast-boiling, as that can also cause splitting.

It’s all part of the learning process, so don’t get discouraged! Happy cooking!
