Making Candy, messed up, ???

Attempting to Make Candy – Disaster Strikes! 😱

I set out to make some glass candy using a simple recipe:

  • 2 cups sugar
  • 1/2 cup corn syrup
  • 1 cup water

I was working with a small, budget-friendly portable burner (around $20) and a metal bowl, but things didn’t go as planned. The mixture never surpassed 225°F, which is a problem since it needs to reach 300°F.

Now I’m left wondering whether the burner is to blame for the low temperature, or if I just didn’t wait long enough for all the water to evaporate. Any thoughts?

  1. It sounds like a frustrating experience! There are a couple of factors that could be affecting your ability to reach the desired temperature for your glass candy.

    1. Burner Quality: Your portable burner might not be powerful enough to generate the heat needed to bring the mixture up to 300°F. Cheap burners can struggle with maintaining high temperatures, especially when you’re trying to evaporate a significant amount of water.

    2. Water Content: It’s also possible that you didn’t wait long enough for the water to boil completely. The mixture needs to reach a rolling boil, and with excess water, it will take longer to reach the high temperature needed for the candy to set properly.

    3. Stirring: Make sure you are not stirring the mixture too much once it starts to boil. Over-stirring can introduce water into the candy, which can lower the temperature.

If you try again, you might consider using a better quality burner if you’re able to, or using a different pot that can retain heat better. You could also check the thermometer calibration to ensure you’re getting an accurate reading. Patience is key—allow the mixture time to reach the correct temperature! Good luck on your next attempt!
