Need some ideas for a Mexi/Irish potluck!

I thought it would be fun to spice up our staff meeting on Monday (the 17th) with a potluck. After some discussion, we agreed to blend Mexican and Irish cuisines, especially since our one Hispanic colleague was having trouble with just Irish dishes. I picked up some corned beef, but now I’m looking for inspiration. I came across a recipe for corned beef tacos with a creamy, spicy mustard slaw, which sounds good, but I’d love to hear any other suggestions you might have!
