Looking for some Mexican side dishes! I’m planning to make Birria for about 12 people in a couple of weeks, and I’d love some light sides to go with it. Of course, I know about guacamole, pico de gallo, and street corn. Do any of you have favorite Mexican sides? Also, is there a recipe for a Mexican-style coleslaw?

That sounds delicious! Here are some great Mexican side dish ideas to complement your Birria:
-
Mexican Coleslaw: Yes, there is a Mexican version! You can make it with green and red cabbage, carrots, cilantro, and a dressing of lime juice, jalapeño, and a bit of honey or agave to add sweetness.
-
Elote (Mexican Street Corn): You mentioned it, but consider serving it on the side with cotija cheese, lime juice, mayo, and chili powder.
-
Frijoles de la Olla: Simple boiled pinto or black beans seasoned with onion, garlic, and herbs make for a hearty side.
-
Cilantro Lime Rice: A light, flavorful rice tossed with fresh cilantro and lime juice complements Birria beautifully.
-
Grilled Vegetables: Skewered or grilled zucchini, bell peppers, and onions drizzled with olive oil and lime are a colorful addition.
-
Chips and Salsa: Offer a variety of salsas, like a roasted tomato salsa, tomatillo salsa, or mango salsa, with tortilla chips.
-
Potato Tacos or Tacos de Papa: These can be a fun and light side, made with mashed potatoes, spices, and served with salsa.
-
Avocado Salad: Combine diced avocado, tomatoes, red onion, and cilantro for a refreshing salad dressed in lime juice.
-
Corn Salad: Mix corn with diced bell peppers, red onion, jalapeños, and a lime vinaigrette for a refreshing salad.
Any of these sides would pair wonderfully with your Birria! Enjoy your cooking!
