I’ve whipped up a delicious garlic-infused dish featuring both vegetables and fish—both of which I created myself! Just a heads-up, all measurements are rough estimates.
For the Veggie Dish:
- One potato (I prefer red, but any type works)
- A thick slice of purple onion (you can also use scallions or mix both!)
- One or two small mushrooms
- Optional: sliced black olives
- One carrot
- 1/3 tsp. garlic powder
- 1/3 tsp. seasoned salt
- Baco’s fake bacon bits (use as much as you like; real bacon bits can work too)
- A one-inch-thick slice of Velveeta cheese (if you’re not a fan, feel free to substitute with any soft, melty cheese)
Start by chopping the vegetables into bite-sized pieces—no peeling necessary! Combine all the ingredients except the cheese in a covered dish and microwave for about three minutes. Check the veggies; if they’re not tender yet, microwave for an additional minute. Once cooked, place the cheese on top and return to the microwave for another minute and a half. This recipe serves two or one very hungry individual!
And while I’m at it, here’s another great garlic recipe that’s better suited for the oven but can still be made in the microwave:
- One salmon steak
- A sprinkle of lemon pepper and garlic salt
Cook the salmon in a covered dish in the microwave for three minutes. I found this combo to be so flavorful that I didn’t even need any sauce!
