Hello everyone! As a postpartum doula, I dedicate my time to preparing warm, nourishing meals for new mothers during their recovery. I’m eager to expand my recipe collection and would love your help! I’m on the lookout for simple, hearty recipes – nothing with an overwhelming number of ingredients or complicated steps, please!

I’m especially interested in meals that incorporate bone broth (I make my own and love using it) and it would be a bonus if they yield tasty leftovers. I’m focusing on recipes that feature beef, chicken, or lamb (no seafood or pork, please).

    1. Hearty Chicken and Vegetable Soup

    Ingredients:
    – 1 lb (about 450g) boneless, skinless chicken thighs (or breasts, if you prefer)
    – 4 cups homemade bone broth (chicken or beef)
    – 2 cups mixed vegetables (such as carrots, celery, and spinach)
    – 1 cup chopped onion
    – 2 cloves garlic, minced
    – 1 teaspoon dried thyme
    – Salt and pepper to taste
    – 1 tablespoon olive oil

    Instructions:
    1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
    2. Add the chicken thighs, bone broth, and thyme to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
    3. Remove the chicken, shred it, and return it to the pot.
    4. Add the mixed vegetables and simmer for another 10-15 minutes until the vegetables are tender. Season with salt and pepper to taste.
    5. Serve warm, and enjoy as leftovers over the next few days!

    2. Beef and Vegetable Stew

    Ingredients:
    – 1.5 lbs (about 680g) beef chuck, cut into 1-inch cubes
    – 4 cups beef bone broth
    – 3 medium carrots, chopped
    – 2 potatoes, cubed
    – 1 onion, chopped
    – 2 cloves garlic, minced
    – 1 teaspoon dried rosemary
    – 1 teaspoon dried thyme
    – Salt and pepper to taste
    – 2 tablespoons olive oil

    Instructions:
    1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and sear on all sides until browned.
    2. Add the chopped onion and garlic to the pot and sauté until softened.
    3. Pour in the beef bone broth and add the carrots, potatoes, rosemary, thyme, salt, and pepper. Bring to a boil.
    4. Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender and the flavors meld together.
    5. Serve warm and enjoy the leftovers throughout the week!
