Pork Recipe Ideas Needed!
I recently bought half a pig and now have about 100 lbs of pork to work with. I’m planning to smoke the pork butt and ribs, and I have a few recipes for pork chops, but I’m at a loss for what to do with the smoked ham hocks and the pork shoulder roasts, which are essentially 2” thick pork steaks.

Does anyone have any creative recipes to share beyond the typical pulled pork? Thanks!

  1. Absolutely! Here are some ideas for using your smoked ham hocks and pork shoulder roasts aside from pulled pork:

    Smoked Ham Hocks

    1. Ham and Bean Soup: Use the smoked ham hocks to create a hearty soup. Simmer them with white beans, onions, garlic, carrots, celery, and seasoning. The hock will add a rich flavor to the broth.

    2. Collard Greens: Cook collard greens with smoked ham hocks for a flavorful side dish. Simmer the greens in the broth from the hocks for great flavor.

    3. Split Pea Soup: Use the hocks to make a comforting split pea soup. Cook split peas with the ham hock, onions, carrots, and celery for a filling meal.

    4. Casseroles: Chop the meat from the ham hock and use it in casseroles. It pairs wonderfully with potatoes, cheese, and vegetables.

Pork Shoulder Roasts (2” thick steaks)

    1. Braised Pork Shoulder: Sear the pork shoulder steaks in a hot pan, then braise them in a mixture of broth, wine, or BBQ sauce, along with onions and spices until tender.

    2. Pork Fajitas: Slice the pork shoulder steaks thinly and marinate in fajita seasoning. Sauté with bell peppers and onions, and serve in tortillas with your favorite toppings.

    3. Pork Stir-Fry: Cut the shoulder into bite-sized pieces and stir-fry them with your choice of vegetables and a savory sauce like soy sauce or teriyaki.

    4. Carnitas: Braise the pork shoulder with citrus juice, garlic, and spices, then shred it and crisp up the meat in a hot pan for delicious carnitas.

    5. Pork Steaks with Salsa: Grill or pan-sear the pork shoulder steaks and serve them topped with a fresh salsa (like tomato, mango, or pineapple) for a fresh and vibrant dish.

You have plenty of options to experiment with your pork, so enjoy!
