Graduation Party Potato Recipe Needed!

I’m planning a graduation party this spring and would love some help with a potato side dish. The menu so far includes pulled pork sliders, fresh veggies and fruit trays, and dessert (still to be determined).

I have access to fresh potatoes (no frozen) and am looking for some delicious side dish ideas. Any recipes would be greatly appreciated!

The party will be an open house, and my guest list is around 150, depending on how many friends without printed invitations show up. Thanks in advance for your suggestions!
