Can I make pulled pork from a rack of pork?

I’m planning to whip up some pulled pork sandwiches and I have a rack of pork from Costco. Do you think it would work well for this recipe? I’m considering using a slow cooker for the cooking process. Any tips or advice on how to proceed would be appreciated!
