Recipe help?

Looking for some recipe assistance! I’m trying to recreate a dish my grandmother used to make. Unfortunately, we don’t talk anymore, so I can’t ask her for the details.

She always referred to it as Johnny Marzetti, but it didn’t match any of the recipes or pictures I’ve come across online. It did have some similar ingredients, but she used spaghetti noodles instead. It was almost like a spaghetti casserole, light on the sauce, with ground beef and an abundance of cheese. Any suggestions?

  1. That sounds like a comforting dish! It seems like your grandmother’s version of Johnny Marzetti might be a unique take on a spaghetti casserole. You could try this recipe, which is inspired by what you described:

    Cheesy Spaghetti Casserole

    Ingredients:
    – 8 oz spaghetti noodles
    – 1 lb ground beef
    – 1 small onion, diced
    – 1 clove garlic, minced (optional)
    – 1 can (15 oz) diced tomatoes (or tomato sauce if you prefer)
    – 1 cup shredded mozzarella cheese (or a blend of your favorite cheeses)
    – 1 cup ricotta cheese (or cottage cheese)
    – 1 tsp Italian seasoning (or to taste)
    – Salt and pepper to taste
    – 1/2 cup grated Parmesan cheese (for topping)

    Instructions:
    1. Preheat your oven to 350°F (175°C).
    2. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
    3. In a large skillet over medium heat, cook the ground beef, diced onion, and garlic until the beef is browned and the onion is tender. Drain any excess fat.
    4. Stir in the diced tomatoes (with juices), Italian seasoning, salt, and pepper. Let it simmer for a few minutes to combine the flavors.
    5. In a large bowl, mix the cooked spaghetti, the meat mixture, and ricotta cheese until everything is well combined.
    6. Transfer the mixture to a greased baking dish. Top with mozzarella cheese and sprinkle with Parmesan cheese.
    7. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
    8. Let it cool for a few minutes before serving.

Feel free to adjust the amount of cheese and spices to suit your taste! This should bring back some memories of that cheesy goodness your grandmother made. Enjoy!
