Recipes for an EXTREMELY picky eater?

Need Help with Recipes for an EXTREMELY Picky Eater!

Hey everyone! I’m hoping for some assistance because I’ve been having a really tough time finding recipes that my husband will actually eat. I’ve tried asking friends for suggestions for picky eaters, but he hasn’t liked any of them!

Here’s a list of what he refuses to eat:
– Anything white and creamy (like sour cream, ranch, cream cheese, cottage cheese, etc.)
– Pasta
– Any kind of turkey (sausage, ground turkey, etc.)
– Tomatoes
– Most fruits

The only vegetables he enjoys are broccoli, spinach, and carrots.

If anyone has any recipe ideas or suggestions, I would be so grateful! We’ve been stuck in a rut, eating the same ten meals over and over, and I really need some fresh inspiration. Thanks in advance for your help!

  1. I totally understand your frustration! Catering to a picky eater can be a challenge, but here are some recipe ideas that might work for your husband:

    1. Chicken and Broccoli Stir-Fry

    • Ingredients: Boneless skinless chicken breasts, broccoli, soy sauce, garlic, ginger, and olive oil.
    • Instructions: Slice the chicken, sauté it in olive oil until browned. Add minced garlic and ginger, then toss in the broccoli and a splash of soy sauce. Stir-fry until the broccoli is tender-crisp.

    2. Carrot and Spinach Frittata

    • Ingredients: Eggs, spinach, grated carrots, cheese (if he likes it, or you can skip), salt, and pepper.
    • Instructions: Whisk the eggs and mix in the spinach and carrots. Pour into a greased skillet and cook on low until set. Optional: sprinkle cheese over the top and finish under the broiler.

    3. Broccoli Cheese Stuffed Chicken

    • Ingredients: Chicken breasts, broccoli (steamed and chopped), shredded cheddar cheese, garlic powder, salt, and pepper.
    • Instructions: Preheat the oven. Cut a pocket in the chicken breasts, stuff them with the broccoli and cheese mixture, season, and bake until the chicken is cooked through.

    4. Spinach and Cheese Quesadillas

    • Ingredients: Flour tortillas, fresh spinach, shredded cheese (like cheddar or mozzarella), and olive oil.
    • Instructions: Heat a bit of oil in a pan, add spinach until wilted, then place on a tortilla and sprinkle with cheese. Top with another tortilla and cook until golden on both sides, then slice into wedges.

    5. Carrot and Broccoli Bake

    • Ingredients: Broccoli, carrots, olive oil, salt, and pepper.
    • Instructions: Toss chopped broccoli and carrot pieces with olive oil, salt, and pepper. Roast in the oven until tender and slightly crispy.

    6. Grilled Chicken with Steamed Vegetables

    • Ingredients: Chicken breast, olive oil, seasoning of choice (like paprika or garlic powder), broccoli, and carrots.
    • Instructions: Season and grill the chicken until cooked. Serve with steamed broccoli and carrots on the side.

    7. Fried Rice with Veggies

    • Ingredients: Cooked rice, broccoli, carrots, spinach, soy sauce, and eggs.
    • Instructions: Sauté vegetables in a pan, add cooked rice and soy sauce, and push to one side. Scramble eggs in the empty side, then mix together.

Feel free to adjust any of these recipes based on his preferences, and don’t hesitate to ask for his input or help in the kitchen! It might also help to experiment with different seasonings to see if he would enjoy a new twist on familiar ingredients. Good luck!
