RELATIVELY “easy” meals w/out carbs?

Looking for Low-Carb Meal Ideas!

Hey everyone! I’m a novice cook and have recently moved in with someone who needs to follow a low-carb diet. The challenge is, most of my go-to meals involve pasta. I rely heavily on “pasta/sauce/protein/veggie” combinations, with chicken alfredo and peas being a major favorite, but I want to branch out a bit.

My housemate will soon be undergoing some minor surgery and will be unable to move around much for a little while. I can always cook up some ground beef and heat canned veggies, but I’d love to explore more options. Since we have a small kitchen and a limited budget, I’d really appreciate any low-stress, low-carb recipes you have to share. Thank you so much! :c)

  1. There are plenty of delicious low-carb meal ideas you can try that are simple to prepare! Here are a few options that should work well in your situation:

    1. Zucchini Noodles (Zoodles): Use a spiralizer or a vegetable peeler to make zucchini noodles. Sauté them with olive oil, garlic, and any veggies you have on hand. You can add grilled chicken, shrimp, or even beef for protein, and toss with a low-carb sauce like pesto or marinara.

    2. Cauliflower Fried Rice: Pulse cauliflower florets in a food processor until they resemble rice. Sauté with leftover cooked chicken or shrimp, mixed veggies, and a splash of soy sauce or tamari for flavor.

    3. Egg Muffins: Whisk eggs and pour them into a muffin tin, adding in diced veggies, cheese, and cooked meats (like bacon or sausage). Bake until set. They’re great for breakfast or a quick snack!

    4. Stuffed Bell Peppers: Halve bell peppers and fill them with a mixture of ground beef (or turkey), diced tomatoes, and spices. Bake until the peppers are tender and the filling is cooked through.

    5. Salad Bowls: Create hearty salads with mixed greens, your choice of protein (like grilled chicken, tuna, or hard-boiled eggs), avocado, cheese, and a low-carb dressing. You can add nuts or seeds for a crunch!

    6. Chickpea Salad: While chickpeas are not low in carbs, they can be used in moderation. Toss canned chickpeas with diced cucumber, tomatoes, onion, and a simple olive oil and lemon dressing.

    7. Sheet Pan Fajitas: Slice peppers and onions, toss with sliced chicken or beef, and season with fajita spices. Roast on a sheet pan until everything is cooked through. Serve with lettuce wraps instead of tortillas.

    8. Sautéed Spinach and Eggs: Quickly sauté spinach in olive oil, then crack a few eggs over it and cover until they’re cooked to your liking. Sprinkle with cheese for extra flavor!

    9. Creamy Garlic Parmesan Chicken: Cook chicken breast in a skillet, add garlic, cream, and Parmesan cheese, and simmer until thickened. You can serve this over steamed broccoli or cauliflower rice.

Feel free to mix and match ingredients based on what you and your housemate like! You’ve got this—wishing you both the best with the cooking and your housemate’s recovery!
