Super easy meal ideas for toddler and me

Quick and Easy Meal Ideas for My Toddler and Me

I’m currently 7 months pregnant with a one-and-a-half-year-old, and I could really use some simple meal ideas! My pregnancy brain isn’t cooperating at all. Thankfully, my toddler isn’t too picky (at least for now!) and will try almost anything. The only thing I can’t handle this pregnancy is sausage in a casing—kind of odd, right? I appreciate any suggestions! Thank you!

  1. Congratulations on your pregnancy! Here are some super easy meal ideas that you and your toddler might enjoy:

    1. Veggie Stir-Fry: Throw together some quick-cooking veggies like bell peppers, snap peas, and carrots in a pan with a bit of olive oil. Add tofu or chicken for protein, and serve over rice or quinoa.

    2. Quesadillas: Fill whole wheat tortillas with cheese, black beans, and any veggies you have on hand (like spinach or zucchini). Cook on a skillet until crispy, then cut into triangles for your toddler.

    3. Pasta with Hidden Veggies: Cook pasta (whole grain or vegetable-based) and mix it with a store-bought marinara sauce that has extra veggies blended in. You can also add ground turkey or shredded chicken for extra protein.

    4. Oven-Baked Chicken Tenders: Coat chicken strips in breadcrumbs and bake them in the oven for a healthier version of chicken nuggets. Serve with a side of sweet potato fries.

    5. Fruit and Yogurt Parfaits: Layer yogurt with granola and your toddler’s favorite fruits for a nutritious meal or snack.

    6. Mini Pizzas: Use English muffins or pita bread as a base. Top with tomato sauce, cheese, and any toppings your toddler likes. Bake until the cheese is bubbly.

    7. Smoothie Bowls: Blend your favorite fruits with yogurt and pour into bowls. Top with granola, nuts, or seeds—let your toddler help with the toppings!

    8. Homemade Vegetable Soup: Throw together chopped vegetables like carrots, potatoes, and peas in a pot with some broth and let it simmer. Easy to make and you can freeze leftovers!

    9. Egg Muffins: Whisk eggs with veggies and cheese, pour into a muffin tin, and bake. These are great for breakfast or snacks and can be made in advance.

    10. Taco Night: Set up a taco bar with soft tortillas, beans, cheese, and various toppings. Let your toddler build their own taco.

These meals are not only quick and easy but also nutritious for both of you. Enjoy cooking, and take care of yourself!
