I’m interested in learning how to create common dairy items from scratch at home, and I’m currently focusing on dairy products. I’ve come across recipes for cream cheese, cottage cheese, sour cream, and others, but they all typically require whole milk. I recently heard that a combination of half water and half heavy cream could serve as a substitute for whole milk. Would this work in those recipes? Since we don’t drink milk and cream has a longer shelf life in the refrigerator, I’d love to use it exclusively.
