- 1 medium onion, finely chopped
- 2 carrots, diced

- 1 cup (240ml) beef broth

- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 teaspoon dried thyme (or fresh if you have it)
- 1 cup frozen peas (optional)
- 2 tablespoons olive oil
For the mashed potato topping:
- 2 lbs (900g) potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup (120ml) milk (more or less to desired creaminess)
- Salt and pepper to taste

- Prepare the mashed potatoes:
- Boil the potatoes in salted water until tender (about 15-20 minutes). Drain and return to the pot.
