What are your favorite easy sauces to accompany proteins?

What are your favorite quick sauces to pair with proteins? I often whip up a tangy, pureed version of chimichurri, but I’m looking to explore new options.

Here’s my basic recipe:

  • 1/2 cup cilantro
  • 1/2 cup parsley
  • Juice of one lemon
  • About 1 tablespoon of red wine vinegar
  • Salt and pepper to taste
  • 1 or 2 cloves of garlic
  • Approximately 1/2 teaspoon of cumin

Then, I blend in olive oil until I reach my preferred consistency.
