One of my favorite made-up dishes from leftover ingredients is what I like to call “Fridge Stir-Fry Surprise.” I usually start by scavenging whatever vegetables I have left—often a mix of bell peppers, zucchini, and broccoli. I chop them up and sauté them with some garlic and ginger for added flavor.
Sometimes, I toss in leftover protein like grilled chicken or tofu. To give it a unique twist, I sauté some leftover rice or quinoa with a splash of soy sauce, sesame oil, and a sprinkle of chili flakes. For crunch, I add a handful of nuts or seeds that are hanging around—like almonds or sunflower seeds.
Finally, I top it off with an egg, either scrambled or fried, and a drizzle of sriracha or hoisin sauce for a little kick. It’s a colorful, flavorful dish that’s completely unique every time! What about you—what’s your favorite creative leftover dish?
