What’s the term for this?
It’s right on the tip of my tongue (though I might be mistaken that it even has a specific name).
What do you call the process of steeping herbs or other flavoring ingredients in cream? I recall seeing a mashed potato recipe where rosemary and thyme were infused into the cream for extra flavor. I think it might be French, but I could totally be getting it wrong.
My partner loves Bailey’s French vanilla coffee creamer and wants to cut back on spending and reduce his intake of carrageenan. I thought it would be fun to make our own by steeping vanilla beans in cream and adding sugar. I started telling him about it, but I just couldn’t remember the name of that technique.
