What is your grilled cheese trick?

What’s your secret for the perfect grilled cheese? I like to mix beef tallow with my butter (preferably Italian butter). Occasionally, I’ll sauté some onions with sumac for an extra kick!

My trick is to use a mix of sharp cheddar and Gruyère for a super cheesy inside, and I like to sprinkle a bit of garlic powder on the outside of the bread before grilling for an added kick. Have you ever tried adding any herbs to your mix?
