what to make my boyfriend for dinner?

What should I cook for my boyfriend’s return dinner?

My boyfriend is coming back from vacation today, and I want to surprise him with a delicious homemade meal. He’s not very picky and always enjoys what I make, but I know his stomach might be a bit sensitive after his trip. Last night, I made lemon bars, so I’m considering a meal that could pair well with that, though it’s not a requirement!

Some dishes I’ve prepared for him in the past include chicken alfredo, chicken parmesan, beef stroganoff, Cajun jambalaya, Cajun chicken pasta, minestrone soup, mac and cheese, and waffles. I love experimenting with recipes from different cultures, so I’m open to trying something new as well.

I’d greatly appreciate any suggestions. Thank you! 🙂

  1. It’s great that you’re planning a special dinner for your boyfriend’s return! Since he might have a sensitive stomach after his holiday, it would be best to prepare something light yet comforting. Here are a few suggestions that would pair nicely with lemon bars for dessert:

    1. Lemon Herb Grilled Chicken: Marinate chicken breasts in lemon juice, olive oil, garlic, and herbs like thyme and rosemary. Grill or bake them, and serve with a side of steamed veggies or a light salad. The lemon flavor would complement both the dish and the dessert.

    2. Pasta Primavera: A light pasta dish with seasonal vegetables, olive oil, garlic, and a sprinkle of parmesan. You can use whole grain or gluten-free pasta if you’re concerned about his stomach.

    3. Stuffed Bell Peppers: Lightly stuffed with quinoa or rice, vegetables, and a touch of ground turkey or chicken. They’re flavorful but still easy on the stomach.

    4. Savory Quinoa Bowl: Cook quinoa and top with roasted veggies (like zucchini, bell peppers, and asparagus) and a light lemon vinaigrette. You could add some grilled chicken or chickpeas for protein.

    5. Baked Salmon with Asparagus: A fillet of baked salmon with a drizzle of lemon and side of roasted asparagus can be both light and satisfying.

    6. Chicken Soup with Lemon and Greens: A soothing homemade chicken soup with fresh greens can be comforting. You can add lemon to brighten it up.

Whatever you choose, keep the flavors bright but not too heavy. Enjoy your dinner date, and he’ll surely appreciate the effort you put into it!
